Today is St. Patrick’s Day & what better way to observe it then to eat & drink your “greens” at STACKED! For the month of March, STACKED has come up with some really terrific dishes that incorporate pesto & arugula. My family recently tried these signature menu items at the STACKED in Thousand Oaks, which is just a hop, skip & a short drive from the Valley.
Wild Arugula Mediterranean Salad
Just look at this colorful salad! I’m the kind of person that if you put feta cheese on a salad, I’m definitely going to want it. ๐ In addition to feta, it comes with arugula (hence the name of the salad), artichoke hearts, grape tomatoes & toasted almonds.
It also comes with green & red peppers, which I don’t happen to be a fan of but the beauty of STACKED is that when you order an item from their menu, you can customize it to your liking. When you order from the tablet on the table, you can remove or add ingredients to your dish. Genius!
Pesto Chicken Sandwich
My husband absolutely loved this sandwich! The chicken breast was moist & flavorful. The sandwich is topped with a generous helping of arugula, which is a great way to get your green in. Basil pesto mayo is spread on the brioche bun & gives it a tasty zing. The real star of the sandwich in my opinion is the Pamesan breadcrumb crisp. Holy smokes, it’s so good! I wanted to order more of those crisps by themselves & eat as a side dish.
Basil Pesto & Wild Arugula Pizza
This pizza is very similar to the salad since it is topped with Arugula & grape tomatoes. Mozzarella AND feta cheese, along with red onion are also added into the mix.
Chicken Pesto Mac ‘N Cheese
This is another signature item for March. While we didn’t order this dish (we were getting really stuffed), we plan on going back before the end of the month to try it out!
Thin Mint Cookie Shake
We definitely had room for dessert though & we shared this delightful drink. Right away, my kiddo took the Thin Mint Cookie (yep, it’s an actual Girl Scout cookie).

I love experimenting with different toppings and cheeses on my pizza. I was never a big vegetable eater and I learned to do this with pizza to get myself and my kids to eat more vegetables.
