Cauliflower Rice Added to Rubio’s Coastal Grill Menu

Cauliflower rice is a popular side dish among folks on the keto diet and for those who want gluten-free options. Although I don’t have gluten sensitivities, nor am I on the keto diet, I do like the idea of increasing my intake of veggies as opposed to carbs.

You’ve seen cauliflower rice in the grocery stores, and you may have seen it offered at a few restaurants. Well, I am happy to report that it is now being added to the menu at all Rubio’s Coastal Grill restaurants starting today, July 14th!

Cauliflower is gluten-free and low in calories and carbs. It’s also rich in nutrients and fiber! With health benefits, fewer calories and carbs compared to rice, Cauli Rice, is available for an additional $2 as a substitute for rice in any of Rubio’s bowls and burritos. It can also be ordered as a side with any entrée or kids meal.

But what is it made of? Rubio’s Cauli Rice is made from riced cauliflower cooked with fresh cilantro, lime juice, lemongrass and sea salt. I don’t know about you, but this sounds delicious and I can’t wait to pair it with my tacos plate, instead of my usual order of traditional rice!

For those with lil’ ones who are picky eaters, this is an excellent substitute so that they can get their veggies in, along with their burritos! 😉
